Britnie Lia of Dover’s Sassy Biscuit is named NH’s best chef — she credits these 3 dishes

DOVER — Chef Britnie Lia once thought running the kitchen as a sous chef at the Grand Floridian Hotel in Walt Disney World would be the pinnacle of her career. Now the Sassy Biscuit Co. chef is becoming a rising star in the Seacoast culinary scene.

Lia walked away from a full-ride scholarship at the University of Central Florida to pursue her culinary career. She worked her way up the ranks at different hotels and attractions until she reached her dream job working for Disney. When the coronavirus pandemic forced the closure of hotels and shook the tourism industry, weeks turned into months with no end in sight. When her husband was offered a job in New England, she took a leap of faith and landed at the young and budding Southern-style café, Sassy Biscuit Co., which opened in Dover during the pandemic.
