Manchester restaurant Mr. Mac's considers national move

The brother-sister team of Patrick Cain and Valerie Anderson has been so effective in creating a concept, a look and a reputation for Mr. Mac's in Manchester, that some diners mistake the macaroni and cheese restaurant for a franchise.

It may well be, some day, now that the partners have announced plans to take the comfort food concept national.

Cain and Anderson conceived of Mr. Mac's in 2008, as she was retiring from a career in hospital administration, and he was looking for a change of pace from his job as an executive in the retail fashion industry. They wanted to create something in the food industry "that wasn't already on every street corner," Cain said.

With their children grown and enough money between them to finance the endeavor, they decided to start a business together in New Hampshire. Since opening in 2010, the dine-in or take-out restaurant with more than 20 varieties of mac and cheese has built a considerable following, with many fans clamoring for locations closer to home, according to Anderson.

"It was in our very successful fifth year that we realized that the fastest way we could expand Mr. Mac's was to partner with those who share our passion for this concept," she said. "We realized that we had the expertise to create a franchise plan that would make this work for everyone."

So last fall, they started working with a consultant group and a legal team to get the ball rolling on a franchise offering that went to market earlier this year. "We're currently in negotiations with a few people and gaining interest daily," Cain said. Read more from unionleader.com.
