Third-generation co-owner Chuck Stergiou steps aside at landmark Puritan Backroom restaurant

Chuck Stergiou won’t be greeting customers and telling corny jokes at the Puritan Backroom anymore.

Stergiou is selling his ownership stake in the popular North End restaurant after a quarter-century, a move that will give the next generation a greater voice in the business that will celebrate its 100th anniversary in 2017.

“This transition is about continuity and not change,” Chris Pappas, a fourth-generation part-owner, said Wednesday.

“It’s about making sure the Puritan as a local institution is going to be around for another generation and hopefully, a lot more beyond that,” said Pappas, who serves on the Executive Council. “We felt it was the right time to approach the third generation about a transition to the fourth generation.”

For decades, customers have come to enjoy the top-selling chicken tenders, which Pappas’ grandfather claimed he invented in the 1970s and which recently were the subject of a shout-out from USA Today.

“With the Backroom, you get that warm fuzzy feeling,” Stergiou said this week. “It’s almost that comfort thing. What you hear from the customers is ‘We came here when we were kids.’ ‘My grandmother brought me here.’ ‘Our parents brought us here. We have kids now. We love it.’”

With Stergiou’s departure, the ownership group will consist of Arthur Pappas, his son, Chris, and his son-in-law, Eric Zink. Read more from the unionleader.com.
